We adapted the Woo2 concept to the medium but with a cool twist. You can utilize a quarter size (9”x13”),
commercial grade, sheet pan for indirect cooks. So, now you have more flexibility when cooking ribs, briskets, butts
or any other atypical meats: the ability to go round or rectangular on the set-up! 

Our Medium Woo2 raises the grid to the felt rim. However, we are fabricating in-house; so, if you have a
special “sweet spot” height, we can customize your Woo2. All you need to do is specify in your order
how high above the fire ring you want the grid and we will take it from there. If you don’t specify a
height, we’ll assume the felt line is good.

The Medium Woo2 offers the same basic fit and functions as its big brother, the Large Woo2, just on a
smaller scale. To prevent the Medium Woo2 from sliding into the gap between the cooker’s inner wall
and fire ring, three washers “bumpers” are welded to the Medium Woo2’s lower ring.

The “nuts and bolts” of the Medium Woo2 design are:

  • The Standard Medium Woo2 raises the medium’s grid to the felt line, approximately 4.0-
    inches above the fire ring.
  • You can customize the height to your “sweet spot”. 
  • Ring diameter is 14.125-inches OD.
  • Five vertical studs support the upper ring and grid.
  • A quarter size, sheet pan can slide between the two front studs.
  • The material is 18-8 or 304 stainless stock.
  • Three washers are welded to the lower ring and keep the Woo2 centered atop the fire ring.
  • Two removable Woo2 Crossbars support the indirect piece(s).
  • The spacing between the crossbars is approximately 7.5-inches.
  • There may be a slight wobble with the Medium Woo2 when sitting on the fire ring. The wobble
    has no impact on cooking.
  • The Medium Woo2 may have minor grinding marks from the fabrication process. The marks
    have no impact on use and should become indistinguishable after a couple cooks.. 

 

Direct Cooks:
 

On direct cooks, the Standard Medium Woo2 raises the grid to the felt line. Remember, we can
customize to your desired “sweet spot” height.

What to do:

  1. Add the lump and smoking wood (you can fill the fire ring) and light the lump.
  2. Set the Woo2 on the fire ring. Make sure the four short posts point up.
  3. Place the grid on the upper Woo2 ring.
  4. When the lump is ready, begin the cook.

Indirect Cooks:
 

On indirect set-ups, just drop in the two Crossbars and your ready to go. The Medium Woo2 offers
two indirect options: round or rectangular. The rectangular set-up utilizes a pan and/or two fire bricks.
The pan is a quarter size, 9” x 13”, commercial sheet pan. The pans are available at most discount
merchants and restaurant supply stores. The two stones under the pan are half-size fire bricks, 4.5” x
9.0” x 1.25”. The bricks are available at most brickyards. The pan/bricks set-up is a workable solution
for long cuts of meat.

The round set-up utilizes a 12-inch diameter pizza pan and BGE’s medium (12-inch) pizza stone. The
12-inch size matches up nicely to the 12-inch interior diameter of the fire ring. We carry a 12-inch Drip
Pan
for the Medium Woo2. The pan specifications are 14 gage aluminum, tapered side and 1” deep. It’s a solid pan.

There are two basic set-up methods for an indirect cook.

What to do:

  1. Add the lump and smoking wood (you can fill the fire ring) and light the lump.
  2. Outside the cooker, add the two Crossbars to the Woo2 by slipping each crossbar between the
    short vertical posts and studs. Make sure they are properly positioned, see picture. Note the
    crossbars are different lengths.
  3. Set the Woo2 on the fire ring. Make sure the four short posts point up.
  4. Place the grid on the Woo2.
  5. If you are using a stone or brick(s), set it on the grid to warm up.
  6. When you are ready to start the cook, using hand protection:
    1. Lift the grid/stone (remember the pieces are hot) and drop in the wood chunks;
    2. Place the indirect pieces on the Crossbars;
    3. Replace the grid on the Rig;
    4. Load the meat and begin the cook.


OR

  1. Add the lump and smoking wood (you can fill the fire ring) and light the lump.
  2. Outside the cooker on a level surface, set-up the Woo2 for the desired cook.
    1. Make sure the four short posts point up;
    2. Slip the Woo2 Crossbars between the short vertical posts and studs;
    3. Place the indirect pieces on the Crossbars;
    4. When you are ready to begin the cook:
      1. Add smoking wood to the lump;
      2. Add the grid and meat atop the Woo2;
      3. Carefully place the loaded Woo2 into the cooker and begin the cook.
     

Presently, the Medium Woo2 is our only raised grid set-up for this cooker. We’ve
experimented with making a Spider and Adjustable Rig for the medium but given
the cooker’s space limitations, we have not formulated a multi-tasking design
worthy of your money.
